Bare Bones Chocolate

Bare Bones Chocolate
Bare Bones Chocolate was an obvious choice for us to include in our first ever 'Explorer' Box. They epitomise everything we love about the artisan chocolate world and are one of the very few UK producers who craft from bean to bar. The bar we chose this month is Guatemala Dark 65% with flavours of honey and floral fruit that burst out - they have other treasures which we hope to include in future boxes.
About the chocolate
The bar is single origin Guatemala 65% Dark with taste notes of honey and brown sugar with a yellow fruit finish.

Region: Rio Dulce
Source: XOCO Cooperative
Conditions: 600m above sea level
Fermentation: Fermented in wooden boxes
Ingredients: Cocoa beans, organic raw unrefined cane sugar, organic cocoa butter.

About Bare Bones
Bare bones are a micro-batch, bean to bar chocolate company based in Glasgow. They source single origin specialty cacao from farms in Central America and Madagascar. They make their chocolate in a tiny workshop in the South Side of Glasgow in micro-batches of around 8kg at a time. They roast their cacao on a modified Giesen coffee roaster and have engineered most of their equipment from scratch, to get the best possible quality for their small batch sizes. You can visit their website and find out more about their Bean to Bar process here
